As a working mom dinner is stressful. 'When I can manage I try to only spend 10-15 minutes on dinner. This one has to be a favorite of my husbands. I don't get to say this a lot about what I cook but I made this recipe. It was inspired by Jason's Deli; in 2011-2012 they had this seasonal "chipotle roast beef sandwich with provolone" We were obsessed and I spent the next several years trying to recreate it. I came up with this, recently they brought it back for a spell and I had the pride of hearing my husband say "I like yours better" and I walked around the rest of the day with my head held high and a cocky attitude.
So on to the goods, here is how I make one of our favorite meals.
First i'll start off by saying normally do not shop at walmart but one can not deny their prices.

Ingredients:
Hormel Roast Beef
Provolone Cheese
French Bread
Chipotle aioli sauce
Chipotle Aioli Sauce:
(easy version)
1 cup of mayonnaise
1/4 tsp sugar
1/5 tsp salt
1 tbsp chipotle pepper in abodo sauce
Blend all ingredients and voila literal awesome sauce.
Preheat oven to 350 degrees.
Microwave roast beef
Cut french bread in quarters.

Cut centers out inside sections.

Put bread in a baking dish and place it in the oven for 5 mins, just long enough to slightly toast. I usually only leave it in there long enough to prepare the meat mixture.

Remove Beef from sauce a remove the fat, be careful it will be very hot.

Put the meat in a bowl and add a spoonful of the sauce and several spoonfuls of the meat gravy.

Mix and shred mixture. It should be moist, if it is not add more sauce.

Remove bread from oven and add the meat.

Top with provolone.

Place pan in the oven just long enough to melt the cheese.
Plate and add microwaved steamed veggies as a side.

I hope you all enjoy.
